Black Cod with Miso
- 4 Black Cod (Sablefish) Filets, 8 oz. each, about 2” thick or as thick as you can get, evenly
- 2 cups White Miso paste
- 1 ¼ cup sugar
- ¾ cup Sake
- ¾ cup Mirin
Directions
- Prepare the Miso marinade by bringing Sake and Mirin to boil in a medium sauce pot over high heat and cook for half a minute.
- Reduce heat to low, then stir in Miso paste until smooth.
- Turn heat back up to high and add sugar, stirring constantly until completely dissolved.
- Remove from heat and cool for 2 hour.
- Pour half the miso mixture into Pyrex dish.
- Pat fish very dry with paper towels, then place into Pyrex dish and pour remaining miso over them to coat fully.
- Cover dish with plastic wrap and refrigerate for 3 days, turning over every day to coat.
- When ready to cook, heat oven broiler to high.
- Wipe off any excess miso from each filet, and place in heavy sauté pan skin side down.
- Broil about 3 minutes until top turns brown, then turn broiler off and set oven to 350 and bake for 10-15 minutes depending on how thick the filets are.
