Black Cod with Miso

  • 4 Black Cod (Sablefish) Filets, 8 oz. each, about 2” thick or as thick as you can get, evenly
  • 2 cups White Miso paste
  • 1 ¼ cup sugar
  • ¾ cup Sake
  • ¾ cup Mirin

Directions

  1. Prepare the Miso marinade by bringing Sake and Mirin to boil in a medium sauce pot over high heat and cook for half a minute.
  2. Reduce heat to low, then stir in Miso paste until smooth.
  3. Turn heat back up to high and add sugar, stirring constantly until completely dissolved.
  4. Remove from heat and cool for 2 hour.
  5. Pour half the miso mixture into Pyrex dish.
  6. Pat fish very dry with paper towels, then place into Pyrex dish and pour remaining miso over them to coat fully.
  7. Cover dish with plastic wrap and refrigerate for 3 days, turning over every day to coat.
  8. When ready to cook, heat oven broiler to high.
  9. Wipe off any excess miso from each filet, and place in heavy sauté pan skin side down.
  10. Broil about 3 minutes until top turns brown, then turn broiler off and set oven to 350 and bake for 10-15 minutes depending on how thick the filets are.
